Ingredients:
3 cups of milk (26 fl. ounces)
100 g white chocolate
2 tbsp sugar
1 tsp. vanilla extract
1 tsp cinnamon
1/2 tsp cardamom
1/4 tsp nutmeg
1/4 tsp allspice
Directions: melt the white chocolate into a saucepan of milk on medium-low heat. Stir in sugar and vanilla extract. Stir in the spicesand let simmer very gently for a few minutes, stirring constantly. Then pour into cups and enjoy!
Substitutions:
- use vanilla flavoured soy milk instead of regular milk; omit additional vanilla and sugar
- you could make do with just the cinnamon and the cardamom, but the nutmeg and allspice really round out the flavour

Sounds delicious :)
chai is my fav! Can't wait to try this one! Although I'm still thinking about the peanut butter one!
I bought that elephant teapot for my mom this past Christmas! (She loves using elephants as decoration pieces, and she collects teapots.)
LOVE chai. Since I don't have some of the ingredients at home, I usually just add a chai tea bag to my usual cup of hot chocolate (i.e. the powdered kind). Found that a minute or less was enough...any longer and it was WAY too strong!
Thanks for sharing this recipe, Julie! Definitely adding this to my "recipes to try" list...along with all the other ones! :)
This looks d-lish! I'm not a huge white chocolate fan, but I really think that I would like it in combination with chai!
awesome! i've really enjoyed this week of hot chocolate, giving me all kinds of ideas...
How do you stop the spices from clumping up? Did you sift them into the hot milk?
Just to clarify: only the cardamom failed to spread out over the surface - we ended up with "little cardamom bombs" on the surface of the drink. I thought they were great but the others were not as pleased.
Ooh, I think this is my favorite of all the (delicious sounding) recipes you posted - white chocolate + chai sounds awesome!
YUM. Thank you so much again for posting all of these great recipes! Each one looks more delicious than the last!
It would be very cool if you do this again next winter! I've loved the series :)
And yes the cardamom was pre-ground, although it may have been damp (we hadn't used the bottle in quite a while.)
Awesome series! Thank you so much for sharing these...
ohhh you baited me with the white choc and hooked me with the chai must try this one :)
Here's a modification monday suggestion for you: http://www.ravelry.com/projects/redflag/wallpaper-hat
This is just perfect! I've been trying to avoid cocoa for a while now, and had been looking longingly at the other hot chocolate recipes you've been posting here. This one I can actually try! Thanks!
